Chocolate Waffles

Makes 4 large round waffles (16 quarters)
Ingredients:
270g Plain flour
30g Cocoa Powder
30g Golden caster sugar
10g Baking powder
5g Bicarbonate of soda
Pinch of Salt
490g Buttermilk
70g Unsalted butter
2 Eggs
90g Dark chocolate
50g Chocolate chips
1 Tbsp Vanilla bean paste
Method:
Start by melting together the butter and chocolate in a microwave or in a bowl over a pan of water, set aside to cool a little.
Sift together the flour, cocoa powder, sugar, baking powder, bicarbonate of soda & salt.
In another large bowl, combine together the buttermilk, eggs, vanilla bean paste and the cooled butter/ chocolate mix.
Gradually whisk the dry ingredients into the wet ingredients, once all combined set aside the mixture to rest for a minimum of 1 hour.
Once ready to cook your waffles, turn your waffle iron on to a high heat & stir the chocolate chips into the mixture.
Once your waffle iron is hot, lightly spray the plates with some grease spray. Take one ladle of mixture, place in the middle of the plate and spread out ever so slightly.
Close the lid and cook for around 5 minutes, or follow the instructions that come with your waffle iron.
Once cooked place the waffles on a cooling rack and allow to cool until able to handle, take a pair of scissors and trim up the edges where the mix may have spilt out of your waffle maker.
